Chocolate Pudding Cake
Preparation time: 20 minutes
Baking time: 25 minutes
Makes: 8 servings


Pudding
1 cupflour
1/2 cupsugar
2 1/2 tspbaking powder
1/4 tspsalt
1/2 cupmilk
1 tspvanilla
3 tbspcocoa powder
3 tbspbutter, melted
1/3 cupchocolate chips/semisweet chunks
Sauce
1/3 cupsugar
1/4 cupbrown sugar
2 tbspcocoa powder
1 cupcold water


1. Preheat oven to 180C/350F. Grease 2L baking dish. In large bowl, stir together flour, sugar, baking pwder, and salt. Beat in milk and vanilla.
2. Stir cocoa powder into melted butter, then add to batter. Stir in chocolate chips/chunks. Pour into baking dish, smooth top.
3. Prepare sauce. Mix together sugars and cocoa powder, sprinkle over batter in dish. Pour cold water evenly over batter. Do not stir.
4. Bake in centre of preheated oven for 25-30 minutes, until cake appears slightly glazed on top and sauce is bubbling around sides of dish. Spoon pudding cake into dessert dishes and serve hot with vanilla ice cream.
