Eleven Cinnamon Muffins

  2 cups flour
  2 tsp. baking powder
  ½ tsp. baking soda
  ½ tsp. salt
  1 tsp. cinnamon
     
  Sift together dry ingredients.
     
  ½ cup sugar
  ½ cup brown sugar
  1 egg
     
  Whisk together egg and sugars in the large bowl.
     
  3 tbsp. vegetable oil
  1 tsp. vanilla
     
 

Beat oil and vanilla into egg mixture.

     
  ¾ cup buttermilk
    (1 tbsp lemon juice or vinegar + milk, let sit for 10 minutes on the counter, should be curdled)
     
 

Alternately add buttermilk and dry mixture to egg/oil mixture, stir. Final mixture should be lump.

     
  ¼ cup brown sugar
  ½ tsp cinnamon
     
  Butter the muffin tin, or put in paper liners. Fill eleven of the cups half full. Yes, this recipe makes eleven muffins. Add ½ tsp. of cinnamon mixture to each cup. Distribute the rest of the batter over the cups, then finish by sprinkling the last of the cinnamon mixture over each cup.
     
    Bake at 400° for 15-18 minutes
