Waffles

  1 ¾ cup flour
  2 tsp. baking powder
  3 tsp. sugar
  ½ tsp. salt

Sift together dry ingredients into large bowl. Split the egg whites and yolks between a medium and small mixing bowl, respectively.

  3 egg yolks
  1 ½ cup milk

Stir egg yolks into the milk, then stir mixture into dry ingredients. Mixture should be lumpy, and need not be entirely mixed together. The oil mixes in better if there are still dry spots showing.

  1/3 cup oil

Stir oil into above mixture.

  3 egg whites

Beat egg whites until stiff. This should take no more than a minute using an electric hand mixer. When beaters are lifted, droopy mountains should form and stay put. Fold egg whites into mixture. Final mixture should be a little lumpy.

Fry in waffle iron until tasty!
